Ahhhh... it's "i before e, except after c or when the sound is "ay"" as in "their" or "deity"
Oh, and the rule doesn't apply when you are pluralising a word ending in a "cy", like "inadequacies"
... but like everything in English, there are exceptions! Like "science", "height" and "feisty"
