I'm new to this and starting to get a couple of regulars.
I keep getting asked to escort - 1 man in particular is very keen to meet me.
He has good feedback. He wants to meet for 3 hours. I have to travel a fair distance for this. I'm not sure what the fee would be or anything else I need to know.

The fee is whatever value you decide is worth your time - That's the only input I can provide as I don't escort or do outcalls.
As Anna said, it is for you decide on what you are happy working for, if you choose to do it
I charge £150 an hour for visiting,, but I only offer a one hour booking and only visit guys local to me.
If you have a long way to travel you have to decide how you will charge for that and if you will give a reduced rate for 3 hours, some girls do, some don't. You also have to work out your travel expenses.
And finally, but not lastly, you have to factor in that he may mess you about once you are there, make sure he makes an escort booking so you can make a report if he does.

You could suggest to him that he travels to your area and books into a hotel, saving him the cost of your travelling time and your expense, this is what I would do, you could suggest that you would reduce your rate to cover the cost of the hotel, but really you are only dropping the price that you may have offered him as a discount for a 3 hr booking.

3 hours is a long time for a guy you don t know - appeal to his better nature and negotiate an in call or for him to travel.
Or you book into a hotel .I find hotel work very safe
Not really. You can even have overnights with guys you never met: having a conversation in advance to ensure he does not waste your time and money is the most important though. Also doing the security checks.

I charge £150 an hour, but 3 hrs seems a long time for a first visit. I always take a minder if I'm doing an out call and it's not in a hotel. Just make sure you check them out fully, find out exactly what they want in advance.
